The touching moments, the funny bits and the beauty of the event itself are a given, of course.  But you've got to capture those unscripted moments, too, like kids acting up or pets misbehaving ... unexpected speeches or wardrobe malfunctions ... the inevitable nervousness and sheer exhaustion of it all.  Those imperfect moments are the most fun to reflect on when flipping through wedding albums later on.  They're more like real life so ya gotta just smile and shake your head--just like we do in situations when that old saying about "best laid plans" applies.
